Vinification:
The Carricante grapes are hand harvested from 15 year old vines in the last two weeks of October. After a light pressing on arrival at the winery, the must undergoes cold decanting and fermentation at low temperatures. The wine is stored for 4 months before a final fermentation and bottling.
Tasting Note
Beautiful density of fruit that opens up to layers of dried apple, lemon and other citrus aromas. Full body, layered and gorgeous. Complex at the end.
